This thermometer can take up to 15-20 minutes to "catch-up" to oven temperature adjustments on both the way up and the way down. While the reading is accurate once the needle moves to the range, a baker can't depend on this to get a true "snapshot" read on cook temps leaving you guessing.If you are looking for something that will accurately and quickly read your oven temps, you may be better off using an oven instant-read digital and clamping it to the inside to your oven.
